In honor of Oktoberfest, Jessica Noll of WTVR’s Virginia this Morning stopped by to make Wiener Schnitzel and red cabbage with Chef Jerome. We’ve included the red cabbage recipe below for you to play along at home!

Bavarian Chef Red Cabbage 

1 head red cabbage, julienned
1/2 medium yellow onion, diced into small brunoise
1 cup diced apples, preferably Granny Smith
1 cup red cooking wine
1/2 cup red wine vinegar
1 cup sugar
1-2 cloves
1 bay leaf
Salt and black pepper to taste
1/4 cup cornstarch
1/2 cup water 

Combine all ingredients (except cornstarch and water) into a large pot. Cook on medium heat until cabbage is tender, about one hour. Combine 1/4 cup cornstarch with 1/2 cup water and slowly stir into pot until red cabbage thickens. Remove from heat and serve.
